Hashbrown Sausage Bites

These Hashbrown Sausage Bites are the perfect combination of crispy hashbrowns and savory sausage, all held together with gooey melted cheese. These bite-sized delights make for an ideal breakfast treat or appetizer, adding a little something extra to any gathering.

Ingredients

  • 2 cups frozen shredded hashbrowns, thawed
  • 1/2 lb ground breakfast sausage
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped green onions
  • 1/4 cup sour cream
  • 1 large egg, beaten
  • Salt and pepper to taste
  • Cooking spray

Instructions

  1. Preheat the Oven: Set your oven to 400°F (200°C). Grease a mini muffin tin with cooking spray to prevent sticking.
  2. Cook the Sausage: In a skillet, cook the ground sausage over medium heat until browned and fully cooked. Drain any excess fat and set aside to cool slightly.
  3. Combine Ingredients: In a large bowl, mix the hashbrowns, cooked sausage, shredded cheese, green onions, sour cream, and beaten egg. Season with salt and pepper to taste.
  4. Form Bites: Scoop about a tablespoon of the mixture into each mini muffin cup, pressing gently to pack it in.
  5. Bake: Bake in the preheated oven for 20-25 minutes, or until golden and crispy on the edges.
  6. Cool and Serve: Let the bites cool for a few minutes before removing from the tin. Serve warm with extra sour cream or your favorite dipping sauce.
