🥔 Golden Skillet Potatoes with Onions
Ingredients

2 lbs (about 4 medium) potatoes, peeled or scrubbed and sliced ¼-inch thick

1 large onion, thinly sliced

3 tbsp olive oil or butter (or a mix)

1 tsp salt (adjust to taste)

½ tsp black pepper
-
½ tsp paprika (optional, for color & flavor)

1 clove garlic, minced (optional)

Fresh parsley or chives, chopped (for garnish)
Instructions

Prep the potatoes

Slice potatoes evenly so they cook at the same rate.

If you like them extra crispy, soak slices in cold water for 20 minutes, then pat dry.

Cook the onions

Heat 1 tbsp oil or butter in a large skillet over medium heat.

Add onions and cook until soft and golden, about 8 minutes. Remove and set aside.

Fry the potatoes

Add remaining oil/butter to the skillet.

Spread potatoes in an even layer, season with salt, pepper, and paprika.

Cook without stirring for 5–6 minutes until the bottoms turn golden.

Flip and continue cooking, stirring occasionally, until tender inside and crisp outside (15–20 minutes total).

Combine & finish

Add onions (and garlic if using) back into the skillet. Toss everything together for 2–3 minutes.

Serve

Sprinkle with fresh parsley or chives.
