Golden Skillet Potatoes with Onions Recipe

🥔 Golden Skillet Potatoes with Onions

Ingredients

  • 2 lbs (about 4 medium) potatoes, peeled or scrubbed and sliced ¼-inch thick

  • 1 large onion, thinly sliced

  • 3 tbsp olive oil or butter (or a mix)

  • 1 tsp salt (adjust to taste)

  • ½ tsp black pepper

  • ½ tsp paprika (optional, for color & flavor)

  • 1 clove garlic, minced (optional)

  • Fresh parsley or chives, chopped (for garnish)

Instructions

  1. Prep the potatoes

    • Slice potatoes evenly so they cook at the same rate.

    • If you like them extra crispy, soak slices in cold water for 20 minutes, then pat dry.

  2. Cook the onions

    • Heat 1 tbsp oil or butter in a large skillet over medium heat.

    • Add onions and cook until soft and golden, about 8 minutes. Remove and set aside.

  3. Fry the potatoes

    • Add remaining oil/butter to the skillet.

    • Spread potatoes in an even layer, season with salt, pepper, and paprika.

    • Cook without stirring for 5–6 minutes until the bottoms turn golden.

    • Flip and continue cooking, stirring occasionally, until tender inside and crisp outside (15–20 minutes total).

  4. Combine & finish

    • Add onions (and garlic if using) back into the skillet. Toss everything together for 2–3 minutes.

  5. Serve

    • Sprinkle with fresh parsley or chives.

    • Enjoy hot as a side for eggs, steak, or roasted chicken.
