  • ½ cup (60g) gluten-free all-purpose flour (with xanthan gum if possible)

  • ½ cup (40g) unsweetened cocoa powder

  • ¼ tsp salt

Wet:

  • ½ cup (115g) unsalted butter

  • 1 cup (170g) semi-sweet chocolate chips (melted with butter)

  • ¾ cup (150g) granulated sugar

  • ¼ cup (50g) brown sugar (adds richness)

  • 2 large eggs, room temperature

  • 1 tsp vanilla extract

Mix-ins:

  • ⅓ cup (60g) white chocolate chips

  • ⅓ cup (60g) milk chocolate chunks or chips

🍫 Instructions:

  1. Preheat oven to 175°C (350°F). Line an 8×8-inch (20cm) pan with parchment paper.

  2. Melt butter & chocolate chips together in a saucepan over low heat, stirring until smooth. Let cool slightly.

  3. In a bowl, whisk eggs, sugars, and vanilla until pale and thick (1–2 minutes).

  4. Slowly add the melted chocolate mixture into the egg mixture and whisk until fully combined.

  5. Sift in the flour, cocoa powder, and salt. Mix gently until just combined (don’t overmix).

  6. Fold in the white chocolate and milk chocolate chips.

  7. Pour batter into the prepared pan and spread evenly.

  8. Bake for 25–30 minutes, or until a toothpick inserted comes out with moist crumbs (not wet batter).

  9. Let cool completely in the pan, then cut into squares.

🍪 Tips:

  • For extra fudgy brownies, take them out closer to 25 minutes.

  • Chill before cutting for cleaner edges.

  • Add walnuts or espresso powder for depth.
