🍰 Gluten-Free Simple Italian Cake (Torta della Nonna Style)

Ingredients:

  • 1 cup (120g) almond flour

  • ¾ cup (90g) gluten-free all-purpose flour

  • ½ cup (100g) granulated sugar

  • ½ cup (120ml) olive oil (or neutral oil)

  • 3 large eggs

  • ½ cup (120ml) milk (or dairy-free alternative)

  • 1 tbsp lemon zest (from 1–2 lemons)

  • 1½ tsp baking powder

  • 1 tsp vanilla extract

  • Pinch of salt

  • Optional: powdered sugar for dusting

Instructions:

  1. Preheat oven to 350°F (175°C). Grease an 8-inch (20cm) round cake pan and line the bottom with parchment paper.

  2. In a large bowl, whisk together eggs and sugar until light and frothy.

  3. Slowly whisk in the olive oil, milk, lemon zest, and vanilla.
