Here’s a delicious Gluten-Free Pineapple Cheese Pound Cake recipe that’s moist, rich, and tropical—with a creamy tang from the cream cheese and a burst of sweetness from pineapple. It’s perfect for brunch, dessert, or a special treat.

🌺 Gluten-Free Pineapple Cheese Pound Cake

🧁 Ingredients:

Dry Ingredients:

  • 1½ cups (180g) gluten-free all-purpose flour (with xanthan gum)

  • ½ tsp baking powder

  • ¼ tsp baking soda

  • ¼ tsp salt

Wet Ingredients:

  • ½ cup (115g) unsalted butter, softened

  • 4 oz (115g) cream cheese, softened

  • 1 cup (200g) granulated sugar

  • 3 large eggs, room temperature

  • 1 tsp vanilla extract

  • 1 tsp pineapple extract (optional, but enhances flavor)

Fruit:

  • ½ cup crushed pineapple, well-drained (reserve juice if making glaze)

🥣 Instructions:

  1. Prep the oven:
    Preheat to 325°F (165°C). Grease a 9×5-inch loaf pan and line with parchment paper.

  2. Mix dry ingredients:
    In a bowl, whisk together gluten-free flour, baking powder, baking soda, and salt. Set aside.

  3. Cream butter and cheese:
    In a large bowl, beat the butter and cream cheese together until smooth and fluffy (2–3 mins).

  4. Add sugar and eggs:
    Add sugar and beat until light and creamy. Add eggs one at a time, beating well after each. Mix in vanilla and pineapple extract.

  5. Combine:
    Gradually add the dry ingredients to the wet mixture. Mix until just combined—do not overmix. Gently fold in the drained crushed pineapple.

  6. Bake:
    Pour batter into the prepared loaf pan. Smooth the top and bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.

  7. Cool:
    Let the cake cool in the pan for 15 minutes, then transfer to a wire rack to cool completely.

🍍 Optional Pineapple Glaze:

Ingredients:

  • 1 cup powdered sugar

  • 1–2 tbsp reserved pineapple juice (or milk)

  • ¼ tsp vanilla

Mix together until smooth and drizzle over the cooled cake.

📝 Tips:

  • Use a good-quality gluten-free flour blend (e.g., Cup4Cup, King Arthur, or Bob’s Red Mill 1-to-1).

  • Be sure the pineapple is well-drained to avoid excess moisture in the batter.

  • Add toasted coconut or chopped pecans for texture.
