This gluten-free donut dough delivers that classic texture and rich flavor you love, without the gluten. Whether you bake or fry them, these donuts are soft, slightly chewy, and perfect for glazing, dipping, or dusting with sugar.
Ingredients:

2 cups gluten-free all-purpose flour (with xanthan gum)

1/2 tsp nutmeg (optional, for classic donut flavor)

Instructions:
1. Mix Dry Ingredients
In a large bowl, whisk together the gluten-free flour, cornstarch, sugar, baking powder, salt, and nutmeg.
2. Whisk Wet Ingredients
In a separate bowl, mix the milk, yogurt, eggs, melted butter, and vanilla extract until smooth.
3. Combine
Add the wet ingredients to the dry mixture and stir until a sticky dough forms. If it’s too wet to handle, add 1 tbsp more flour at a time. If too dry, add a splash of milk.
4. Rest the Dough
Cover the bowl and let the dough rest for 10–15 minutes. This helps hydrate the flour and makes it easier to shape.
5. Shape the Donuts
Dust a surface with gluten-free flour. Roll the dough out to about 1/2 inch thick. Cut into donut shapes using a donut cutter or two round cutters.
Frying Method:
Heat oil in a deep fryer or heavy pot to 350°F (175°C).
Fry donuts in batches, 1–2 minutes per side, until golden brown.
Remove with a slotted spoon and drain on paper towels.
While warm, dip in glaze or roll in cinnamon sugar.
Baking Method:
Preheat oven to 375°F (190°C). Grease a donut pan.
Pipe or spoon dough into pan molds.
Bake for 12–15 minutes until lightly golden and set.
