Ingredients:

  • 1 cup white chocolate chips (gluten-free certified)

  • 1/4 cup heavy cream

  • 4 oz cream cheese, softened

  • 1 tsp orange extract

  • Zest of 1 orange

  • 1/2 cup powdered sugar

  • 1 1/2 cups finely shredded unsweetened coconut (divided)

  • Pinch of salt

  • Instructions:

    1. Melt & Mix:
In a small saucepan or microwave-safe bowl, melt the white chocolate chips with the heavy cream until smooth. Stir frequently and do not overheat.

    2. Cream it Up:
In a medium bowl, beat the softened cream cheese until fluffy. Mix in orange extract, orange zest, and a pinch of salt.

    3. Combine:
Stir in the melted white chocolate mixture. Gradually mix in the powdered sugar and 1/2 cup of the shredded coconut until the mixture is thick and uniform.

    4. Chill:
Cover and refrigerate the mixture for at least 1 hour or until firm enough to roll.

    5. Roll & Coat:
Scoop out small spoonfuls and roll into 1-inch balls. Roll each ball in the remaining coconut to coat like little snowballs.

    6. Set & Serve:
Place truffles on a parchment-lined tray and chill for another 30 minutes. Store in an airtight container in the fridge up to 5 days.

      Optional Add-ins:

      • A drop of natural orange food coloring for an extra citrus glow

      • Chopped dried cranberries or pistachios for texture inside the truffle
