💥 Ingredients:

For the Filling:
  • 1 tbsp olive oil or butter

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 1 cup cooked shredded chicken (or use mushrooms/spinach for vegetarian)

  • 1 cup cream cheese (softened)

  • ½ cup mozzarella cheese (shredded)

  • ¼ tsp black pepper

  • ¼ tsp paprika

  • Salt to taste

  • 2 tbsp chopped parsley or green onion (optional)

For the Dough:
  • 1 cup mashed potatoes (well-mashed, no lumps)

  • 1 egg

  • ½ cup gluten-free all-purpose flour

  • ¼ cup cornstarch

  • Salt to taste

For Coating:
  • ½ cup gluten-free breadcrumbs (or crushed gluten-free cornflakes)

  • 1 egg (beaten)

  • ¼ cup cornstarch

For Frying:
  • Oil for deep frying (neutral oil like canola or sunflower)

📝 Instructions:

1. Make the Creamy Filling

  • Heat oil in a pan over medium heat.

  • Sauté onions and garlic until soft and fragrant.

  • Add shredded chicken and cook for 1-2 minutes (or sauté mushrooms/spinach if using vegetarian).

  • Stir in cream cheese, mozzarella, pepper, paprika, and salt.

  • Cook on low until everything is creamy and combined.

  • Mix in parsley or green onion.

  • Let it cool and refrigerate for 15–20 minutes to firm up.

2. Prepare the Dough

  • In a bowl, mix mashed potatoes, egg, gluten-free flour, cornstarch, and salt.

  • Knead into a soft but non-sticky dough. If too sticky, add a little more cornstarch.

3. Form the Bombs

  • Take a spoonful of dough, flatten it in your palm.

  • Add a teaspoon of chilled filling in the center.

  • Carefully seal and roll into a smooth ball.

  • Repeat until all dough and filling are used.

4. Coat the Bombs

  • Roll each ball in cornstarch, dip in beaten egg, then coat with gluten-free breadcrumbs.

5. Fry to Perfection

  • Heat oil in a deep pan to 170–180°C (340–355°F).

  • Fry 3–4 bombs at a time until golden and crispy (2–3 minutes per side).

  • Drain on paper towels.

  • You can bake or air-fry at 200°C (390°F) for 15–20 minutes for a lighter version.

  • Freeze before frying for a quick make-ahead snack.
