Ingredients:

2 cups gluten-free all-purpose flour (with xanthan gum)

1/3 cup granulated sugar

1 tbsp baking powder

1/2 tsp salt

1 tsp orange zest (from 1 large orange)

1/2 cup unsalted butter (cold, cubed)

2/3 cup dried cranberries (or fresh/frozen)

2/3 cup heavy cream (plus extra for brushing)

1 large egg

1 tsp vanilla extract
Optional Orange Glaze:

1/2 cup powdered sugar

1–2 tbsp fresh orange juice
Instructions:

Preheat Oven:
Preheat to 400°F (200°C). Line a baking sheet with parchment paper. -
Mix Dry Ingredients:
In a large bowl, whisk flour, sugar, baking powder, salt, and orange zest. -
Cut in Butter:
Add cold, cubed butter. Cut in with a pastry cutter or fingers until mixture resembles coarse crumbs. -
Add Cranberries:
Stir in cranberries to coat with flour. -
Mix Wet Ingredients:
In a small bowl, whisk cream, egg, and vanilla. Pour into the dry mixture and gently stir just until combined. -
Shape Scones:
On a floured surface, pat dough into a 1-inch thick circle. Cut into 8 wedges. Place on baking sheet. Brush tops with cream. -
Bake:
Bake 16–20 minutes, until golden. Cool on a wire rack. -
Glaze (Optional):
Mix powdered sugar with orange juice until smooth. Drizzle over cooled scones.
