🌴 Gluten-Free Coconut Cake
Ingredients:
Dry:

1 ½ cups gluten-free all-purpose flour (with xanthan gum)

¼ tsp baking soda

Wet:

½ cup unsalted butter, softened

¾ cup granulated sugar

2 large eggs

1 tsp pure vanilla extract

½ tsp coconut extract (optional but adds great flavor)

¾ cup canned coconut milk (shake well)

½ cup shredded unsweetened coconut
Instructions:

Preheat oven to 175°C (350°F). Grease and line an 8-inch round cake pan.
