Ingredients:
-
1/2 cup (1 stick) unsalted butter, melted and slightly cooled
-
1 cup light brown sugar, packed
-
1 large egg
-
2 tsp pure vanilla extract
-
1 1/4 cups gluten-free all-purpose flour (with xanthan gum if not already included)
-
1/2 tsp baking soda
-
1/4 tsp salt
-
1 cup semisweet chocolate chips
-
Optional: 1/2 cup chopped walnuts or pecans
-
Instructions:
-
Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper or lightly grease it.
-
In a mixing bowl, combine the melted butter and brown sugar. Stir until smooth and glossy.
-
Add the egg and vanilla, whisking until fully incorporated.
-
In a separate bowl, whisk together the gluten-free flour, baking soda, and salt.
-
Gradually stir the dry ingredients into the wet mixture until just combined. Fold in the chocolate chips (and nuts if using).
-
Spread the dough evenly in the prepared pan. Use a spatula to smooth the top.
-
Bake for 22–27 minutes, or until the top is golden and a toothpick inserted into the center comes out mostly clean (a few moist crumbs are okay).
-
Cool in the pan for at least 20 minutes before slicing into bars.
-
Tips:
-
For extra gooey bars, bake on the shorter end of the time range.
-
To make dairy-free: use vegan butter and dairy-free chocolate chips.
-
These freeze well—store in an airtight container for up to 3 months.
