Whether you’re baking for a crowd or just craving a nostalgic treat with a gluten-free twist, this easy recipe is sure to become a favorite. No one will even guess they’re gluten-free!

Ingredients:

  • 1/2 cup (1 stick) unsalted butter, melted and slightly cooled

  • 1 cup light brown sugar, packed

  • 1 large egg

  • 2 tsp pure vanilla extract

  • 1 1/4 cups gluten-free all-purpose flour (with xanthan gum if not already included)

  • 1/2 tsp baking soda

  • 1/4 tsp salt

  • 1 cup semisweet chocolate chips

  • Optional: 1/2 cup chopped walnuts or pecans

  • Instructions:

    1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper or lightly grease it.

    2. In a mixing bowl, combine the melted butter and brown sugar. Stir until smooth and glossy.

    3. Add the egg and vanilla, whisking until fully incorporated.

    4. In a separate bowl, whisk together the gluten-free flour, baking soda, and salt.

    5. Gradually stir the dry ingredients into the wet mixture until just combined. Fold in the chocolate chips (and nuts if using).

    6. Spread the dough evenly in the prepared pan. Use a spatula to smooth the top.

    7. Bake for 22–27 minutes, or until the top is golden and a toothpick inserted into the center comes out mostly clean (a few moist crumbs are okay).

    8. Cool in the pan for at least 20 minutes before slicing into bars.

    9. Tips:

      • For extra gooey bars, bake on the shorter end of the time range.

      • To make dairy-free: use vegan butter and dairy-free chocolate chips.

      • These freeze well—store in an airtight container for up to 3 months.
