Here’s a delicious gluten-free chocolate cake with strawberry cream that’s rich, moist, and bursting with fresh berry flavor. Perfect for birthdays, gatherings, or just because you deserve it!


🍫 Gluten-Free Chocolate Cake with Strawberry Cream 🍓

Ingredients

For the Chocolate Cake:
  • 1 cup gluten-free all-purpose flour (with xanthan gum, or add ½ tsp if not included)

  • ½ cup unsweetened cocoa powder

  • 1 tsp baking soda

  • ½ tsp baking powder

  • ¼ tsp salt

  • 2 large eggs

  • ¾ cup granulated sugar

  • ½ cup brown sugar (light or dark)

  • ½ cup plain yogurt or sour cream

  • ½ cup buttermilk (or milk + 1 tsp vinegar)

  • ⅓ cup vegetable oil (or melted coconut oil)

  • 1 tsp vanilla extract

  • ½ cup hot water or brewed coffee (enhances the chocolate flavor)

For the Strawberry Cream:
  • 1 cup heavy whipping cream

  • 2 tbsp powdered sugar

  • ½ tsp vanilla extract

  • 1 cup fresh strawberries, chopped finely

  • Optional: 2–3 tbsp strawberry jam or puree (for more intense flavor)

For Decoration (optional):
  • Fresh strawberries, halved

  • Shaved chocolate or chocolate curls

  • Mint leaves


🧁 Instructions

1. Bake the Cake

  1. Preheat oven to 350°F (175°C). Grease and line two 8-inch round cake pans or one 9×13 pan.

  2. In a large bowl, sift together flour, cocoa powder, baking soda, baking powder, and salt.

  3. In another bowl, whisk eggs, sugars, yogurt, buttermilk, oil, and vanilla until smooth.

  4. Gradually mix the wet ingredients into the dry.

  5. Stir in the hot water/coffee last — the batter will be thin.

  6. Pour into pans and bake for 28–32 minutes, or until a toothpick comes out clean.

  7. Cool in the pan for 10 mins, then transfer to wire rack to cool completely.

2. Make the Strawberry Cream

  1. Whip cold heavy cream with powdered sugar and vanilla until soft peaks form.

  2. Fold in chopped strawberries and strawberry jam/puree (if using).

  3. Chill until ready to use.

3. Assemble

  • If making a layer cake, level the cakes and spread a generous amount of strawberry cream between layers.

  • Frost the top with remaining cream.

  • Decorate with fresh strawberries and chocolate shavings.


✅ Tips

  • For extra decadence, brush the cake layers with a little strawberry syrup before frosting.

  • Make ahead: Cake layers can be baked a day early and wrapped tightly once cooled.
