2 medium apples, peeled, cored, and finely grated (about 1½ cups)

¼ cup olive oil or melted coconut oil

1 tsp vanilla extract

1 tsp baking soda

Instructions:

Preheat the oven to 175°C (350°F). Grease and line an 8-inch round or square cake pan with parchment paper.
