🌟 Lentil Cheese Bread (Gluten-Free, Sugar-Free)

Ingredients:

  • 1 cup red lentils (or yellow lentils), rinsed well

  • 1½ cups water (for soaking)

  • ½ cup plain yogurt (or thick Greek-style yogurt, dairy or non-dairy)

  • 2 eggs

  • ½ tsp baking soda

  • ½ tsp salt

  • 1 tsp apple cider vinegar or lemon juice

  • 1 cup shredded cheese (cheddar, mozzarella, or your favorite)

  • ½ tsp garlic powder (optional)

  • ½ tsp dried herbs (oregano or thyme – optional)

  • 1–2 tbsp olive oil or melted butter (for richness)

🧑‍🍳 Instructions:

  1. Soak Lentils
Rinse and soak lentils in water for at least 4 hours or overnight. Drain before using.

  2. Blend Batter
In a blender or food processor, add:

    • Soaked lentils

    • Yogurt

    • Eggs

    • Salt, garlic powder, herbs

    • Olive oil

    • Blend until smooth and creamy.

  3. Add Baking Soda + Vinegar
Add baking soda and vinegar last. Blend again briefly. The reaction helps it rise and become airy.

  4. Stir in Cheese
Fold in shredded cheese by hand (don’t blend it).

  5. Bake

    • Preheat oven to 180°C (350°F).

    • Line or grease a small loaf pan or 8-inch round pan.

    • Pour in the batter and smooth the top.

    • Bake for 30–35 minutes, or until golden brown and firm to the touch.

    • Let it cool 10 minutes before slicing.

🍞 Notes:

  • You can make it dairy-free by using dairy-free yogurt and vegan cheese.

  • Try chopped olives, jalapeños, or sun-dried tomatoes for variations.

  • Store in the fridge; reheat in a skillet or toaster for best flavor.
