Gluten Free Bread Rolls

Ingredients:

  • 2 1/4 teaspoons (1 packet) active dry yeast
  • 1 1/4 cups warm milk (or dairy-free alternative)
  • 2 tablespoons honey or sugar
  • 2 1/2 cups gluten-free all-purpose flour (with xanthan gum included)
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1/4 cup melted butter (or dairy-free alternative)
  • 1 large egg
  • 1 teaspoon apple cider vinegar
  • 1/2 teaspoon xanthan gum (if not already in your flour blend)
  • 1 tablespoon olive oil (for brushing)

Instructions:

  1. Activate the Yeast: In a small bowl, combine the warm milk, honey (or sugar), and yeast. Stir gently and let sit for about 5-10 minutes until foamy.
  2. Prepare the Dough: In a large mixing bowl, whisk together the gluten-free flour, salt, baking powder, and xanthan gum (if needed).
  3. Mix Wet Ingredients: Add the melted butter, egg, apple cider vinegar, and the activated yeast mixture to the dry ingredients. Stir until well combined.
  4. Knead the Dough: Using a stand mixer with a dough hook or a spatula, mix until the dough is smooth and slightly sticky.
  5. Shape the Rolls: Lightly grease your hands with olive oil and shape the dough into equal-sized balls. Place them in a greased baking dish or on a parchment-lined baking sheet, leaving some space between each roll.
  6. Let Rise: Cover with a clean kitchen towel and let the rolls rise in a warm place for 45-60 minutes until nearly doubled in size.
  7. Bake: Preheat the oven to 375°F (190°C). Brush the tops of the rolls with olive oil for a golden crust. Bake for 20-25 minutes or until lightly browned and firm to the touch.
  8. Cool & Serve: Allow the rolls to cool slightly before serving. Enjoy warm with butter or your favorite spread!

Tips:

  • If your flour blend does not contain xanthan gum, be sure to add it separately to achieve the right texture.
  • For an extra soft texture, place a shallow pan of water in the oven while baking to create steam.
