Ingredients:

1/2 cup (113g) unsalted butter, softened

1/2 cup (100g) brown sugar, packed

1/4 cup (50g) white sugar

1 large egg

1 tsp vanilla extract

1 1/4 cups (150g) gluten-free all-purpose flour blend (with xanthan gum)

1/2 tsp baking soda

1/4 tsp salt

3/4 to 1 cup (130–170g) gluten-free chocolate chips
Instructions:

Preheat oven to 175°C (350°F). Line a baking sheet with parchment paper.

In a large bowl, cream butter and sugars together until light and fluffy.

Beat in egg and vanilla until smooth.

In a separate bowl, whisk together gluten-free flour, baking soda, and salt.

Gradually mix dry ingredients into the wet ingredients until just combined.

Fold in chocolate chips.

Scoop dough (about 1.5 tbsp per cookie) onto baking sheet, spacing them 2 inches apart.
