🧀 Gluten-Free Cheese Scones

Ingredients:

  • 2 cups (250g) gluten-free self-raising flour (or plain GF flour + 2 tsp baking powder)

  • ½ tsp salt

  • ½ tsp mustard powder (optional, enhances cheese flavor)

  • 1 tsp baking powder (extra lift)

  • 4 tbsp (60g) cold butter, cubed

  • 1 cup (100g) grated sharp cheddar (or mix of cheeses)

  • 1 egg

  • ½ cup (120ml) milk (plus extra for brushing)


Instructions:

  1. Preheat oven to 200°C (400°F). Line a baking tray with parchment.

  2. Mix dry ingredients: In a large bowl, combine flour, salt, mustard powder, and baking powder.

  3. Rub in butter: Add butter cubes and rub with fingertips until mixture resembles fine breadcrumbs.

  4. Add cheese: Stir in the grated cheese, reserving a little for sprinkling on top.

  5. Make dough: Beat egg and milk together. Pour into the flour mixture and gently mix until a soft dough forms. (If too sticky, dust with a little extra flour.)

  6. Shape: Turn dough onto a lightly floured surface. Pat to about 1-inch (2.5cm) thick. Cut into rounds with a cutter or shape into rustic triangles.
