Ingredients
For the Chicken and Potatoes:
- 4 bone-in, skin-on chicken thighs (or breasts)
- 1 lb (450g) baby potatoes, halved
- 3 tbsp olive oil, divided
- 4 cloves garlic, minced

For the Parmesan Sauce:
- 4 tbsp unsalted butter
- 1/2 cup grated Parmesan cheese
- 1/2 cup chicken broth
- 1/2 cup heavy cream
- 1/4 cup chopped fresh parsley, for garnish

1. Preheat and Prep:
Preheat your oven to 400°F (200°C). Season the chicken with salt, pepper, paprika, and Italian seasoning. Set aside. Toss the halved potatoes in 2 tablespoons of olive oil and season with salt and pepper.2. Sear the Chicken:
In a large oven-safe skillet, heat the remaining 1 tablespoon of olive oil over medium-high heat. Sear the chicken for 3-4 minutes per side, until golden brown. Remove from skillet and set aside.3. Roast the Potatoes:
In the same skillet, add the prepared potatoes, spreading them out in an even layer. Cook for 5 minutes, stirring occasionally. Remove from heat.4. Make the Sauce:
