Garlic Chicken Fried Rice

🍳 Garlic Chicken Fried Rice

Ingredients:

  • 2 cups cooked rice (preferably day-old, cold rice for best texture)

  • 1 large chicken breast (or 2 thighs), diced into small pieces

  • 4–5 cloves garlic, finely minced

  • 2 eggs, lightly beaten

  • 1 cup mixed vegetables (peas, carrots, corn, or bell peppers)

  • 3 tbsp soy sauce (or tamari for gluten-free)

  • 1 tbsp oyster sauce (optional, for extra flavor)

  • 2 tbsp sesame oil (or vegetable oil)

  • 2 green onions, chopped

  • Salt & pepper to taste


Instructions:

  1. Prepare rice – Make sure your rice is cold and separated. If freshly cooked, spread it on a tray and let it cool so it doesn’t clump.

  2. Cook chicken – Heat 1 tbsp oil in a wok or large skillet. Add diced chicken, season with salt & pepper, and stir-fry until golden brown and cooked through. Remove from pan and set aside.

  3. Scramble eggs – In the same pan, add a little oil if needed. Pour in beaten eggs and scramble until just set. Push to the side.

  4. Garlic base – Add remaining oil, then sauté the minced garlic until fragrant (but not burnt).
