Ingredients:

2 cups cooked rice (preferably day-old, cold rice for best texture)

1 large chicken breast (or 2 thighs), diced into small pieces

2 eggs, lightly beaten

1 cup mixed vegetables (peas, carrots, corn, or bell peppers)
