Ingredients:
- 1 lb steak (ribeye, sirloin, or strip), cut into bite-sized pieces
- 1 lb baby potatoes, halved
- 4 tbsp unsalted butter
- 4 garlic cloves, minced
- 1 tbsp olive oil
- 1 tsp fresh thyme leaves (or ½ tsp dried thyme)
- 1 tsp fresh rosemary leaves (or ½ tsp dried rosemary)
- Salt and pepper, to taste
- 1 tbsp chopped fresh parsley (optional, for garnish)
Instructions:
- Cook the Potatoes:
- Heat a large skillet over medium heat and add the olive oil.
- Once the oil is hot, add the halved baby potatoes (cut side down), and cook for about 5-7 minutes, turning occasionally, until golden and crisp.
- Season the potatoes with salt, pepper, and half of the thyme and rosemary.
- Remove the potatoes from the skillet and set aside.
- Cook the Steak:
- In the same skillet, add 2 tablespoons of butter.
- Once the butter melts and begins to sizzle, add the steak pieces. Season with salt, pepper, and the remaining thyme and rosemary.
- Sear the steak for 3-4 minutes, until browned on all sides and cooked to your desired doneness.
- Remove the steak from the skillet and set aside.
- Prepare the Garlic Butter:
- Lower the heat to medium-low and add the remaining 2 tablespoons of butter to the skillet.
- Stir in the minced garlic and cook for 1-2 minutes until fragrant, being careful not to burn the garlic.
- Combine and Serve:
- Return the potatoes and steak to the skillet, tossing them in the garlic butter to coat evenly.
- Cook for an additional 2-3 minutes to warm everything through.
- Garnish with chopped fresh parsley if desired, and serve hot.
Enjoy your delicious, buttery garlic steak and potatoes!
