It’s a simple yet flavorful dish that brings together tender, juicy steak with golden, crispy potatoes, all enveloped in a garlicky butter sauce.

Ingredients:

  • 1 lb (450g) steak (ribeye, sirloin, or tenderloin), cut into bite-sized pieces
  • 1 lb (450g) baby potatoes, quartered
  • 4 tbsp unsalted butter, divided
  • 1 tbsp olive oil
  • 4 garlic cloves, minced
  • 1 tsp fresh thyme (or 1/2 tsp dried thyme)
  • 1 tsp fresh rosemary (or 1/2 tsp dried rosemary)
  • Salt and pepper, to taste
  • Fresh parsley, chopped, for garnish

Instructions:

  1. Cook the potatoes:
    • In a large skillet, heat 1 tablespoon of olive oil and 2 tablespoons of butter over medium heat.
    • Add the quartered potatoes and season with salt and pepper. Cook for about 10-12 minutes, stirring occasionally, until they are golden brown and tender.
    • Remove the potatoes from the skillet and set them aside.
  2. Cook the steak:
    • In the same skillet, add the steak pieces. Season with salt, pepper, thyme, and rosemary.
    • Cook for 2-3 minutes on each side, until the steak reaches your desired doneness. Remove the steak from the skillet and set aside.
  3. Make the garlic butter sauce:
    • Reduce the heat to low and add the remaining 2 tablespoons of butter to the skillet.
    • Stir in the minced garlic and cook for 1-2 minutes until fragrant, making sure not to burn the garlic.
  4. Combine steak and potatoes:
    • Return the cooked potatoes and steak to the skillet, tossing them in the garlic butter sauce to coat evenly.
    • Cook for another 2-3 minutes, letting the flavors meld together.
  5. Garnish and serve:
    • Remove from heat, sprinkle with fresh chopped parsley, and serve immediately.
