Garlic Butter Shrimp Scampi

Shrimp scampi is a classic Italian-American dish that combines succulent shrimp with a rich garlic butter sauce, all brightened up by a splash of lemon and served over pasta. It’s a quick and flavorful meal perfect for busy weeknights or special dinners.

Ingredients:

  • 1 lb large shrimp, peeled and deveined
  • 4 tbsp unsalted butter, divided
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1/4 tsp red pepper flakes (optional, for heat)
  • 1/4 cup dry white wine (or chicken broth)
  • 2 tbsp fresh lemon juice
  • Salt and pepper, to taste
  • 1/4 cup chopped fresh parsley
  • Freshly grated Parmesan cheese (optional)
  • 8 oz linguine or your favorite pasta

Instructions:

  1. Cook the Pasta:
    • Cook the linguine according to package instructions until al dente. Drain and set aside.
  2. Prepare the Shrimp:
    • Pat the shrimp dry with a paper towel and season with salt and pepper.
    • In a large skillet, melt 2 tablespoons of butter with 2 tablespoons of olive oil over medium heat.
  3. Sauté the Garlic:
    • Add the minced garlic and red pepper flakes to the skillet, sautéing for about 30 seconds until fragrant, but not browned.
  4. Cook the Shrimp:
    • Add the shrimp in a single layer to the skillet. Cook for 2-3 minutes per side, until the shrimp are pink and cooked through. Remove the shrimp and set aside.
  5. Make the Sauce:
    • Pour the white wine into the skillet, scraping up any browned bits. Let it simmer for 1-2 minutes to reduce slightly.
    • Stir in the remaining 2 tablespoons of butter and lemon juice. Simmer for another minute until the sauce is smooth and glossy.
  6. Combine and Serve:
    • Return the shrimp to the skillet, tossing to coat them in the sauce.
    • Add the cooked pasta, tossing everything together until well combined.
    • Garnish with fresh parsley and Parmesan, if desired.
