Garlic Butter Roasted Mushrooms

Garlic Butter Roasted Mushrooms are a delicious and simple side dish that’s packed with savory flavors. Here’s how you can make them:

Ingredients:

  • 1 lb (450g) fresh mushrooms (preferably cremini, button, or baby bella)
  • 3 tbsp unsalted butter, melted
  • 3-4 garlic cloves, minced
  • 1 tbsp olive oil
  • 1 tsp fresh thyme (or ½ tsp dried thyme)
  • 1 tsp fresh rosemary, finely chopped (optional)
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)
  • 1 tbsp Parmesan cheese (optional, for extra flavor)

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. Prepare the mushrooms: Clean the mushrooms by gently wiping them with a damp cloth or paper towel. Remove the stems if they are large or tough. You can leave the small ones whole or slice the larger ones in halves or quarters.
  3. Make the garlic butter: In a small bowl, mix the melted butter, minced garlic, olive oil, thyme, rosemary (if using), salt, and pepper.
  4. Coat the mushrooms: Place the mushrooms in a large bowl and pour the garlic butter mixture over them. Toss them gently to coat evenly.
  5. Roast the mushrooms: Spread the mushrooms in a single layer on a baking sheet. Roast in the preheated oven for about 20-25 minutes, stirring halfway through, until the mushrooms are golden brown and tender.
  6. Finish and serve: Once the mushrooms are done, remove them from the oven. Optionally, sprinkle with grated Parmesan cheese for extra richness. Garnish with freshly chopped parsley before serving.

These mushrooms make a perfect side dish to steaks, chicken, or pasta, and they’re also a great addition to salads or grain bowls. Enjoy!
