Fudge Brownie Bread

If you’ve ever wished brownies could magically turn into a loaf you can slice, this Fudge Brownie Bread is your dream come true. Imagine the dense, chocolate-packed richness of brownies combined with the soft, sliceable texture of quick bread—perfect for breakfast, dessert, or those late-night chocolate cravings. Each slice is intensely fudgy, with a crackly top and a moist, almost truffle-like center. It’s dangerously good and best enjoyed with a cold glass of milk or a scoop of ice cream.


Ingredients

  • 1 cup (2 sticks) unsalted butter

  • 8 oz semi-sweet chocolate, chopped

  • 1 ½ cups granulated sugar

  • ½ cup brown sugar, packed

  • 4 large eggs, room temperature

  • 1 tsp vanilla extract

  • 1 cup all-purpose flour

  • ½ cup unsweetened cocoa powder

  • ½ tsp salt

  • ½ tsp baking powder

  • ½ cup chocolate chips (optional, for extra gooeyness)


Instructions

  1. Prep the oven and pan

    • Preheat oven to 350°F (175°C).

    • Grease and line a 9×5-inch loaf pan with parchment paper.

  2. Melt chocolate and butter

    • In a heatproof bowl, melt butter and chopped chocolate together over a double boiler or in the microwave in 30-second intervals, stirring until smooth. Let cool slightly.

  3. Mix wet ingredients

    • Whisk in granulated sugar and brown sugar until well combined.

    • Add eggs one at a time, whisking well after each addition. Stir in vanilla extract.

  4. Add dry ingredients

    • Sift in flour, cocoa powder, salt, and baking powder. Gently fold until just combined—don’t overmix.

  5. Add extra chocolate

    • Fold in chocolate chips if using for extra fudginess.

  6. Bake

    • Pour batter into the prepared loaf pan and smooth the top.

    • Bake for 50–60 minutes, or until a toothpick inserted in the center comes out with moist crumbs (not wet batter).

  7. Cool and serve

    • Allow to cool in the pan for 15 minutes before transferring to a wire rack.

    • Slice thick and enjoy warm or at room temperature.


Tip: For an even more indulgent version, drizzle with melted chocolate or top with a dusting of powdered sugar before serving.
