🍊 Fluffy Orange Sponge Cake
Ingredients:

1 cup (120g) all-purpose flour (or GF flour blend for gluten-free)

1 tsp baking powder

4 large eggs (room temperature)

¾ cup (150g) granulated sugar

Zest of 2 oranges

½ cup (120ml) fresh orange juice

⅓ cup (80ml) neutral oil (like sunflower or vegetable)

1 tsp vanilla extract

Pinch of salt
Instructions:

Preheat oven to 175°C (350°F). Grease and line an 8-inch round or square pan.

Sift flour, baking powder, and salt in a bowl. Set aside.

In a large bowl, beat eggs and sugar on high speed for 6–8 minutes until pale, thick, and tripled in volume.

Add orange zest, juice, oil, and vanilla. Mix on low just until combined.
