The Florida Loaf is a delightful, tropical-inspired meatloaf with flavors reminiscent of the Sunshine State. Infused with a blend of citrusy zest, sweet tropical fruits, and savory spices, this recipe is perfect for bringing a bit of sunshine to your dinner table.

Ingredients:

  • 1 ½ pounds ground beef or ground turkey
  • 1 cup crushed pineapple, drained (reserve juice)
  • 1 cup breadcrumbs
  • 1 egg, lightly beaten
  • ½ cup finely chopped onion
  • ½ cup finely chopped bell pepper (red or green)
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tbsp Worcestershire sauce
  • Zest of 1 orange
  • ½ cup ketchup or barbecue sauce
  • 2 tbsp reserved pineapple juice
  • Instructions:

    1. Preheat the oven: Set to 350°F (175°C). Lightly grease a loaf pan or line it with parchment paper.
    2. Prepare the mixture: In a large bowl, combine the ground meat, crushed pineapple, breadcrumbs, egg, onion, bell pepper, garlic powder, paprika, salt, pepper, Worcestershire sauce, and orange zest. Mix until just combined—avoid overmixing.
    3. Shape the loaf: Transfer the mixture to the prepared loaf pan and shape it into an even loaf.
    4. Create the glaze: In a small bowl, whisk together ketchup (or barbecue sauce) with the reserved pineapple juice. Spread the glaze evenly over the top of the loaf.
    5. Bake: Place the loaf in the oven and bake for 55–60 minutes, or until the internal temperature reaches 160°F (71°C).
    6. Rest and serve: Let the loaf rest for 10 minutes before slicing. Serve warm with your favorite sides.
    7. Tips:

      • For an extra Floridian touch, garnish with fresh parsley and a sprinkle of orange zest before serving.
      • This loaf also makes delicious leftovers—slice it up for sandwiches or crumble it over a salad!

Enjoy a bite of Florida sunshine with this unique twist on a classic dish! 🌞
