Flaky Chicken Puff Pastries are a delightful blend of crispy, buttery layers wrapped around a creamy, savory chicken filling. Perfect as appetizers, snacks, or even a light meal, these golden parcels are easy to make yet impressively delicious. Whether you’re hosting a party or simply craving something comforting and flaky, this recipe brings the bakery-style goodness right to your kitchen.

Ingredients:

For the Filling:

  • 2 cups cooked, shredded chicken (rotisserie chicken works great)

  • 1 tbsp olive oil or butter

  • 1 small onion, finely chopped

  • 2 garlic cloves, minced

  • ½ tsp black pepper

  • ½ tsp paprika (optional)

  • ½ tsp salt (adjust to taste)

  • ½ cup frozen peas and carrots (optional)

  • 3 tbsp cream cheese or ¼ cup heavy cream

  • 1 tbsp chopped fresh parsley or coriander (optional)

For the Pastries:

  • 1 pack (about 400g) puff pastry sheets, thawed

  • 1 egg (for egg wash)

  • Flour for dusting

  • Instructions:

    1. Prepare the Filling:

      • In a skillet, heat olive oil over medium heat. Sauté the chopped onion until soft and translucent.

      • Add garlic and cook for 30 seconds.

      • Stir in the shredded chicken, peas and carrots (if using), salt, pepper, and paprika.

      • Mix in cream cheese or heavy cream until the mixture is creamy and well combined.

      • Remove from heat and let it cool completely before filling the pastries.

    2. Assemble the Pastries:

      • Preheat oven to 400°F (200°C). Line a baking tray with parchment paper.

      • Lightly flour your work surface. Roll out the puff pastry sheets slightly and cut into equal squares (about 4×4 inches).

      • Place a spoonful of chicken filling in the center of each square.

      • Fold each square into a triangle or rectangle. Press edges with a fork to seal.

      • Brush the tops with beaten egg for a golden finish.

    3. Bake:

      • Place pastries on the prepared baking tray.

      • Bake for 18–22 minutes or until puffed and golden brown.

      • Tips:

        • You can freeze assembled pastries before baking for a quick future snack.

        • Add shredded cheese into the filling for extra richness.

        • Serve with a side of garlic mayo or chili sauce for dipping.
