Fideo with potatoes and ground beef

Ingredients:

  • 1 package (7 oz) fideo pasta (or vermicelli)

  • 1 can (8 oz) tomato sauce
  • 1 tsp cumin
  • 1 tsp chili powder (optional)
  • 4 cups beef broth or water
  • Salt and pepper to taste
  • 2 tbsp vegetable oil

Instructions:

  1. Brown the ground beef: In a large skillet, heat 1 tablespoon of oil over medium heat. Add the ground beef and cook until browned, breaking it up with a spoon. Drain any excess fat, remove the beef from the skillet, and set it aside.
  2. Cook the potatoes: In the same skillet, heat the remaining tablespoon of oil. Add the diced potatoes and cook for about 6-8 minutes, stirring occasionally, until they begin to soften.
  3. Sauté the aromatics: Add the chopped onion and minced garlic to the potatoes. Sauté for 2-3 minutes until the onions are translucent and fragrant.
  4. Toast the fideo: Push the potato mixture to the side of the skillet. Add the fideo pasta to the skillet and lightly toast it, stirring frequently until golden brown, about 2-3 minutes.
  5. Combine ingredients: Add the browned ground beef back to the skillet. Stir in the tomato sauce, cumin, chili powder (if using), and beef broth. Mix everything together.
  6. Simmer: Reduce the heat to low, cover the skillet, and let the mixture simmer for 12-15 minutes, or until the fideo is tender and the potatoes are fully cooked. Stir occasionally to prevent sticking. Season with salt and pepper to taste.
