This comforting dish of fideo with potatoes and ground beef is a simple yet flavorful meal that brings the warmth of home cooking to your table. The fideo pasta is toasted to a nutty perfection before being simmered with hearty chunks of potato and savory ground beef, creating a rich and satisfying combination.
Ingredients:
- 1 package (7 oz) fideo pasta
- 1/2 lb ground beef
- 2 medium potatoes, peeled and diced
- 1/2 onion, finely chopped
- 2 garlic cloves, minced
- 2 tomatoes, diced
- 4 cups chicken broth or water
- 1 tsp cumin
- Salt and pepper to taste
- 2 tbsp oil (for frying)
Instructions:
- Cook the Ground Beef: In a large skillet, heat 1 tablespoon of oil over medium heat. Add the ground beef and cook until browned, breaking it up with a spatula. Season with salt, pepper, and cumin. Remove the beef from the skillet and set aside.
- Cook the Fideo: In the same skillet, add another tablespoon of oil. Add the fideo pasta and fry until golden brown, stirring frequently to avoid burning.
- Add Vegetables: Once the fideo is browned, add the chopped onions, garlic, and diced tomatoes. Cook for 2-3 minutes until the vegetables soften.
- Add Potatoes and Broth: Stir in the diced potatoes and return the cooked ground beef to the skillet. Pour in the chicken broth (or water). Bring the mixture to a boil, then reduce heat and let simmer for 15-20 minutes, or until the potatoes are tender and the fideo has absorbed most of the liquid.
- Season and Serve: Taste and adjust seasoning with salt and pepper. Serve hot.
