Fideo with potatoes and ground beef is a delicious and comforting dish that’s easy to prepare. Here’s a recipe you can follow:

Ingredients:

  • 1 lb ground beef
  • 2 medium potatoes, peeled and diced
  • 1 package (7 oz) fideo pasta (or vermicelli)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups beef broth (or water)
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 2 tbsp vegetable oil
  • Fresh cilantro for garnish (optional)

Instructions:

  1. Cook the Ground Beef:
    • In a large skillet or pot, heat 1 tbsp of vegetable oil over medium heat.
    • Add the ground beef and cook until browned. Break it apart with a spoon as it cooks.
    • Season with salt, pepper, and half of the cumin and chili powder. Remove the cooked beef from the skillet and set it aside.
  2. Cook the Potatoes:
    • In the same skillet, add another 1 tbsp of vegetable oil.
    • Add the diced potatoes and cook until they start to soften and brown, about 5-7 minutes.
    • Remove the potatoes and set them aside with the ground beef.
  3. Cook the Fideo:
    • In the same skillet, add the fideo pasta and toast it until it turns golden brown. This should take about 2-3 minutes. Stir frequently to avoid burning.
  4. Sauté Onions and Garlic:
    • Add the chopped onion and garlic to the skillet with the toasted fideo. Cook until the onions are soft and translucent, about 3-4 minutes.
  5. Combine Ingredients:
    • Return the ground beef and potatoes to the skillet.
    • Add the diced tomatoes (with their juice) and the beef broth.
    • Stir in the remaining cumin, chili powder, and paprika.
    • Bring the mixture to a boil, then reduce the heat to a simmer.
  6. Simmer:
    • Cover and let the mixture simmer for about 15-20 minutes, or until the potatoes are tender and the fideo is cooked through. Stir occasionally to prevent sticking.
  7. Season and Serve:
    • Taste and adjust the seasoning with more salt and pepper if needed.
    • Garnish with fresh cilantro if desired.
    • Serve hot and enjoy!
