Fideo Loco Recipe

Ingredients:
- 2 tbsp vegetable oil
- 1 (7 oz) package fideo (vermicelli noodles)
- 1 lb ground beef (or chorizo)
- ½ small onion, diced
- 2 cloves garlic, minced
- 1 (14.5 oz) can diced tomatoes (or Rotel for spice)
- 4 cups beef or chicken broth
- 1 (15 oz) can pinto beans, drained and rinsed
- 1 tsp ground cumin
- ½ tsp chili powder
- ½ tsp paprika
- Salt & pepper, to taste
- Fresh cilantro, chopped (optional, for garnish)
- Lime wedges (optional, for serving)
Instructions:
- Toast the Fideo:
- Heat vegetable oil in a large skillet or pot over medium heat.
- Add the fideo noodles and stir frequently until they turn golden brown (about 2-3 minutes). Remove and set aside.
- Cook the Meat & Aromatics:
- In the same skillet, cook the ground beef over medium heat until browned. Drain excess grease if needed.
- Add the diced onion and garlic, cooking until softened (about 2 minutes).
- Simmer the Soup:
- Stir in the diced tomatoes, cumin, chili powder, paprika, salt, and pepper. Cook for another 2 minutes.
- Pour in the broth, add the toasted fideo and pinto beans, and bring to a simmer.
- Let cook uncovered for 10-12 minutes or until the noodles are soft and have absorbed some of the broth.
- Serve & Enjoy:
- Garnish with fresh cilantro and serve with lime wedges.
