Enchiladas Suizas are a delicious Mexican dish known for their creamy, cheesy, and slightly tangy flavor. The term “suizas,” meaning “Swiss” in Spanish, refers to the addition of creamy cheese and sauce, giving the dish a European-inspired twist.

Ingredients

Here’s what you’ll typically need to make Enchiladas Suizas:

For the Filling:

  • Shredded chicken, beef, or another protein of choice (traditionally chicken is used)
  • Optional: sautéed vegetables like onions or peppers

For the Suiza Sauce:

  • 1 cup tomatillos (husked and rinsed)
  • 1-2 serrano or jalapeño peppers (adjust spice level to taste)
  • 1 garlic clove
  • 1/4 cup white onion, chopped
  • 1/4 cup cilantro
  • 1 cup Mexican crema or sour cream
  • 1/2 cup chicken broth
  • Salt to taste

For Assembly:

  • 8-12 corn tortillas
  • 1-2 cups shredded cheese (e.g., Oaxaca, Chihuahua, or Monterey Jack)
  • Optional: 2 tablespoons vegetable oil for frying tortillas

Instructions

  1. Prepare the Suiza Sauce:
    • Boil the tomatillos, peppers, and garlic in water for about 5 minutes until softened.
    • Blend the boiled tomatillos, peppers, garlic, onion, and cilantro with the chicken broth until smooth. Stir in the crema or sour cream and season with salt. Set aside.
  2. Prepare the Filling:
    • Cook and shred the chicken or use any filling of your choice. Season with salt and pepper.
  3. Prepare the Tortillas:
    • Lightly fry the tortillas in hot oil for a few seconds to make them pliable, then pat dry with paper towels. Skip frying if you prefer a healthier version.
  4. Assemble the Enchiladas:
    • Preheat the oven to 375°F (190°C).
    • Fill each tortilla with a portion of the shredded chicken or filling, roll tightly, and place seam-side down in a greased baking dish.
    • Pour the Suiza sauce generously over the enchiladas, making sure they are well-coated.
    • Sprinkle the shredded cheese evenly over the top.
  5. Bake:
    • Bake the enchiladas in the preheated oven for 15-20 minutes or until the cheese is melted and bubbling.
  6. Serve:
    • Serve warm, garnished with chopped cilantro, a dollop of crema, and a side of rice or beans.
