Easy Gluten-Free Biscuits (Only 4 Ingredients!)
Ingredients (makes ~8 biscuits)

2 cups gluten-free all-purpose flour (with xanthan gum)

1 tbsp baking powder

½ tsp salt

1 cup heavy cream (or full-fat coconut cream for dairy-free)

Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.

Mix dry ingredients — In a large bowl, whisk flour, baking powder, and salt.

Add cream — Pour in heavy cream and stir until just combined. The dough should be soft but not sticky.

Shape biscuits — Turn dough onto a lightly floured surface, pat to about ¾-inch thickness, and cut into rounds (or drop spoonfuls for rustic biscuits).

Bake — Place biscuits on the prepared sheet and bake 12–15 minutes, until golden on top.

Serve warm with butter, honey, or jam.
Tip:
For extra tenderness, handle the dough as little as possible — overmixing can make them dense.
