Crispy Cheesy Potato Fritters

Golden, crispy, and loaded with cheesy goodness, these potato fritters are the perfect snack or side dish for any occasion. Whether served with a dollop of sour cream, a tangy dipping sauce, or enjoyed on their own, these fritters are sure to be a crowd-pleaser.

Ingredients:

  • 3 medium russet potatoes, peeled and grated
  • 1 small onion, grated
  • 1 cup shredded cheddar cheese (or your favorite cheese)
  • 1/4 cup grated Parmesan cheese
  • 2 large eggs, beaten
  • 1/3 cup all-purpose flour
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • Salt and pepper, to taste
  • Vegetable oil, for frying
  • Instructions:

    1. Prepare the Potatoes
      • Grate the potatoes and onion into a large bowl.
      • Place the grated mixture into a clean kitchen towel and squeeze out as much liquid as possible.
    2. Combine the Ingredients
      • Transfer the grated potatoes and onion to a mixing bowl.
      • Add the cheddar cheese, Parmesan cheese, eggs, flour, garlic powder, paprika, salt, and pepper. Mix until well combined.
    3. Form the Fritters
      • Scoop about 2 tablespoons of the mixture and form it into small patties.
      • Place the patties on a plate or baking sheet and repeat with the remaining mixture.
    4. Fry the Fritters
      • Heat about 1/4 inch of vegetable oil in a large skillet over medium heat.
      • Once the oil is hot, carefully add a few fritters to the pan, making sure not to overcrowd it.
      • Fry for 3–4 minutes per side, or until golden brown and crispy.
    5. Drain and Serve
      • Transfer the cooked fritters to a plate lined with paper towels to drain excess oil.
      • Serve immediately with your favorite dipping sauce or toppings.

        • Drain Thoroughly: Removing excess liquid from the potatoes and onions is key to crispy fritters.
        • Cheese Options: Experiment with different cheeses like Gruyère or mozzarella for unique flavors.
        • Make Ahead: The mixture can be prepared and refrigerated for up to 24 hours before frying.
