🥞 Basic Crepe Recipe

Ingredients:

  • 1 cup all-purpose flour

  • 2 large eggs

  • 1 1/2 cups milk

  • 2 tbsp melted butter (plus more for the pan)

  • 1/4 tsp salt

  • 1 tsp sugar (optional for sweet crepes)

Instructions:

  1. In a bowl, whisk together flour and eggs.

  2. Slowly add milk, whisking until smooth.

  3. Add melted butter, salt (and sugar if using), and mix until combined.

  4. Let batter rest 10–15 minutes.

  5. Heat a lightly buttered nonstick skillet over medium heat.

  6. Pour in a small ladle of batter and swirl to coat the pan in a thin layer.

  7. Cook 1–2 mins per side until lightly golden. Repeat.

🍓 Sweet Crepe Rolls (Strawberry Cream Cheese)

Filling:

  • 1/2 cup cream cheese

  • 2 tbsp powdered sugar

  • 1/2 tsp vanilla extract

  • Fresh sliced strawberries

To assemble:
Spread the sweetened cream cheese over the crepe, top with strawberries, and roll tightly. Dust with powdered sugar or drizzle with chocolate sauce!

🧀 Savory Crepe Rolls (Ham & Cheese)

Filling:

  • Sliced ham

  • Shredded cheese (Gruyère, cheddar, or mozzarella)

  • Optional: Dijon mustard or bechamel sauce

To assemble:
Layer ham and cheese on the crepe, roll it up, and warm in a skillet or oven until melty. Slice into pinwheels if serving as an appetizer.
