  • 1 lb (450g) Italian sausage (mild or spicy)

  • 1 small onion, diced

  • 3 cloves garlic, minced

  • 2 medium carrots, peeled and sliced

  • 2 celery stalks, sliced

  • 1 small red bell pepper, diced (optional)

  • 4 cups (1 liter) chicken broth

  • 1 cup heavy cream

  • 1/2 cup grated Parmesan cheese (plus extra for topping)

  • 1 tsp Italian seasoning

  • 1/2 tsp crushed red pepper flakes (optional)

  • Salt and black pepper, to taste

  • 2 cups baby spinach or chopped kale

  • 1/2 cup small pasta, like ditalini or orzo (optional for a heartier soup)

  1. Cook the sausage:
    In a large pot or Dutch oven, cook the Italian sausage over medium heat until browned and cooked through. Break it up into crumbles as it cooks. Remove and set aside if there’s excess grease.

  2. Sauté the veggies:
    If needed, add a little olive oil to the pot. Add diced onion, carrots, celery, and bell pepper. Sauté for 5–7 minutes until softened. Add garlic and cook for 30 seconds.

  3. Simmer the base:
    Return the sausage to the pot. Pour in the chicken broth. Stir in Italian seasoning, red pepper flakes, and a pinch of salt and pepper. Bring to a boil, then reduce heat and let it simmer for about 10–15 minutes.

  4. Add pasta (optional):
    Stir in pasta if using, and cook until al dente, about 8–10 minutes.

  5. Make it creamy:
    Lower the heat and stir in the heavy cream and Parmesan. Simmer gently (don’t boil) for 5 minutes until creamy and warmed through.

  6. Finish with greens:
    Stir in baby spinach or kale and let it wilt (1–2 minutes).

  7. Taste and serve:
    Adjust seasoning if needed. Serve hot with extra Parmesan and crusty bread on the side.
