Ingredients

For the Crust:

  • 1 ½ cups all-purpose flour
  • 1 tbsp sugar
  • ½ tsp salt
  • ½ cup unsalted butter, cold and cubed
  • 4–5 tbsp ice water

For the Caramel Custard Filling:

  • ¾ cup granulated sugar (for caramel)
  • 2 tbsp water
  • 1 cup whole milk
  • 1 cup heavy cream
  • 4 large eggs
  • ½ cup granulated sugar
  • 1 tsp pure vanilla extract
  • Pinch of salt
  • Instructions

    Step 1: Prepare the Crust

    1. In a large mixing bowl, whisk together the flour, sugar, and salt.
    2. Cut in the cold butter using a pastry cutter or your fingertips until the mixture resembles coarse crumbs.
    3. Gradually add ice water, one tablespoon at a time, mixing gently until the dough comes together.
    4. Form the dough into a disk, wrap in plastic wrap, and chill for at least 30 minutes.

    Step 2: Make the Caramel

    1. In a medium saucepan, combine ¾ cup sugar and 2 tablespoons of water. Cook over medium heat, swirling occasionally, until the sugar dissolves and turns a deep amber color.
    2. Carefully add the milk and cream, whisking constantly. (The caramel may harden but will melt as it heats.)
    3. Heat until the caramel mixture is smooth and just warm, then set aside to cool slightly.

    Step 3: Prepare the Custard

    1. In a large bowl, whisk together the eggs, ½ cup sugar, vanilla, and salt until smooth.
    2. Slowly whisk the caramel mixture into the egg mixture until fully combined.

    Step 4: Assemble and Bake

    1. Preheat your oven to 350°F (175°C).
    2. Roll out the chilled pie crust on a lightly floured surface and fit it into a 9-inch pie dish. Trim and crimp the edges as desired.
    3. Pour the caramel custard filling into the prepared crust.
    4. Bake for 35–40 minutes, or until the custard is set but still slightly jiggly in the center.

    Step 5: Cool and Serve

    1. Let the pie cool to room temperature, then refrigerate for at least 2 hours before serving.
    2. Optionally, garnish with whipped cream or a drizzle of caramel sauce.
    3. Enjoy the perfect blend of creamy custard and caramel sweetness with every slice!
