Cranberry Loaf

This cranberry loaf is perfect for the holiday season or any time you crave a comforting treat. With its tender crumb and balance of flavors, it pairs wonderfully with a cup of tea or coffee.

Ingredients

  • 2 cups all-purpose flour
  • ¾ cup granulated sugar
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ¾ cup orange juice (freshly squeezed for best flavor)
  • ¼ cup unsalted butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup fresh or frozen cranberries, chopped
  • ½ cup chopped nuts (walnuts or pecans, optional)

Instructions

  1. Preheat & Prepare
    Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
  2. Mix Dry Ingredients
    In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. Combine Wet Ingredients
    In a separate bowl, whisk together the orange juice, melted butter, egg, and vanilla extract.
  4. Bring It Together
    Gradually stir the wet ingredients into the dry ingredients until just combined. Be careful not to overmix.
  5. Add Cranberries & Nuts
    Fold in the chopped cranberries and nuts (if using). The batter will be thick.
  6. Bake
    Pour the batter into the prepared loaf pan and spread evenly. Bake for 50–55 minutes, or until a toothpick inserted into the center comes out clean.
  7. Cool & Enjoy
    Let the loaf cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. Slice and serve!
