Ingredients
- 2 cups all-purpose flour
- ¾ cup granulated sugar
- 1 ½ teaspoons baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- ¾ cup orange juice (freshly squeezed for best flavor)
- ¼ cup unsalted butter, melted
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup fresh or frozen cranberries, chopped
- ½ cup chopped nuts (walnuts or pecans, optional)

- Preheat & Prepare
Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper. - Mix Dry Ingredients
In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. - Combine Wet Ingredients
In a separate bowl, whisk together the orange juice, melted butter, egg, and vanilla extract. - Bring It Together
Gradually stir the wet ingredients into the dry ingredients until just combined. Be careful not to overmix. - Add Cranberries & Nuts
Fold in the chopped cranberries and nuts (if using). The batter will be thick. - Bake
Pour the batter into the prepared loaf pan and spread evenly. Bake for 50–55 minutes, or until a toothpick inserted into the center comes out clean. - Cool & Enjoy
