Cottage Cheese Berry Protein Ice Cream is a healthy and delicious frozen treat that combines the creamy texture of cottage cheese with the sweetness of berries and the added benefit of protein. Here’s a simple recipe for making this nutritious ice cream:

Ingredients:

  • 1 ½ cups low-fat cottage cheese (or regular if you prefer)
  • 1 cup mixed berries (strawberries, blueberries, raspberries, etc.)
  • 1-2 tablespoons honey or maple syrup (adjust for sweetness)
  • 1 scoop vanilla protein powder (optional, for extra protein)
  • ½ teaspoon vanilla extract (optional)
  • 1-2 tablespoons milk or almond milk (to help blend)
  • Pinch of salt (optional)

Instructions:

  1. Blend the Cottage Cheese and Berries:
    • In a blender or food processor, combine the cottage cheese, mixed berries, honey or maple syrup, and vanilla extract (if using).
    • Blend until smooth, scraping down the sides as needed. If the mixture is too thick, add a little milk or almond milk to help it blend.
  2. Add Protein Powder (Optional):
    • If you’re using protein powder, add it to the mixture and blend again until fully incorporated. This step will increase the protein content of the ice cream.
  3. Freeze the Mixture:
    • Pour the mixture into a container (a loaf pan or shallow dish works well).
    • Smooth the top and cover with a lid or plastic wrap.
    • Freeze for at least 4-6 hours, or until solid. For best texture, stir the mixture every 1-2 hours to prevent ice crystals from forming.
  4. Serve:
    • Once the ice cream is frozen, scoop out portions and enjoy!
    • For a smoother texture, let the ice cream sit at room temperature for a few minutes before scooping.

Optional Add-ins:

  • Chopped nuts or seeds for crunch.
  • Chocolate chips or dark chocolate shavings for a chocolatey twist.
  • Shredded coconut for extra flavor.

Tips:

  • You can substitute the mixed berries with other fruits like mango, peach, or banana.
  • If you don’t have protein powder, you can skip it, but the ice cream will have slightly less protein.

This ice cream is a great high-protein snack or dessert that’s satisfying and keeps you on track with your health goals!
