Coconut Cake

Here’s a delightful recipe for a classic Coconut Cake. This cake is light, fluffy, and packed with the tropical flavor of coconut, perfect for any occasion. Coconut cake has a unique charm, with its moist crumb and creamy frosting layered with a sweet coconut finish.

Ingredients:

For the Cake:

  • 2 1/4 cups all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup vegetable oil
  • 1 1/2 cups granulated sugar
  • 4 large eggs, at room temperature
  • 1 tbsp vanilla extract
  • 1 cup coconut milk
  • 1 cup shredded sweetened coconut

For the Frosting:

  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 tsp vanilla extract
  • 1/4 cup coconut milk
  • 1 cup shredded coconut for garnish

Instructions:

  1. Prepare the Cake:
    • Preheat your oven to 350°F (175°C). Grease and flour three 8-inch round cake pans.
    • In a medium bowl, sift together the flour, baking powder, and salt. Set aside.
    • In a large mixing bowl, beat the softened butter, oil, and sugar together until light and fluffy.
    • Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
    • Gradually add the dry ingredients, alternating with the coconut milk, beginning and ending with the flour mixture.
    • Fold in the shredded coconut until evenly distributed.
    • Divide the batter among the prepared cake pans and bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
    • Allow the cakes to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
  2. Prepare the Frosting:
    • In a large bowl, beat the butter until creamy. Gradually add the powdered sugar and continue beating until smooth.
    • Add the vanilla extract and coconut milk, mixing until the frosting is light and fluffy.
  3. Assemble the Cake:
    • Place the first layer of cake on a serving plate. Spread a layer of frosting on top, then add the second layer and repeat.
    • Frost the top and sides of the cake, smoothing it with a spatula.
    • Press shredded coconut onto the top and sides for a beautiful coconut finish.
  4. Serve & Enjoy!
    • Slice and serve the cake. This coconut cake pairs wonderfully with fresh berries or a hint of lime zest.
