Classic French Crêpes: A Delicate and Versatile Delight

Light, lacy, and irresistibly tender — classic French crêpes are the epitome of culinary elegance. Whether folded around sweet fillings like strawberries and cream or served savory with ham and cheese, these paper-thin pancakes offer a world of delicious possibilities.

🥞 Ingredients:

  • 1 cup all-purpose flour

  • 2 large eggs

  • 1 1/4 cups milk

  • 2 tbsp melted butter (plus more for greasing)

  • 1 tbsp sugar (optional for sweet crêpes)

  • 1/4 tsp salt

  • 1 tsp vanilla extract (optional for sweet crêpes)

🍳 Instructions:

  1. Blend the Batter:
    In a blender or mixing bowl, whisk together flour, eggs, milk, melted butter, salt, and optional sugar/vanilla until smooth. Let the batter rest for 30 minutes to relax the gluten and ensure tender crêpes.

  2. Heat the Pan:
    Lightly grease a nonstick skillet or crêpe pan and place over medium heat. When hot, pour about 1/4 cup of batter into the center and immediately swirl the pan to spread it thinly.

  3. Cook Until Set:
    Cook for about 1–2 minutes, or until the edges begin to lift and the bottom is lightly golden. Flip and cook for another 30 seconds.

  4. Stack & Serve:
    Transfer to a plate and cover with a towel to keep warm. Repeat with remaining batter.

  • Lemon juice + powdered sugar

  • Caramelized apples + cinnamon

  • Ham + Gruyère cheese

  • Spinach + mushrooms + béchamel

  • Batter too thick? Add a splash of milk to thin.

  • Letting the batter rest is key for smooth texture.

  • Use a small ladle or measuring cup for consistent portioning.
