Here’s a delightful recipe for Churro Stuffed Cheesecake Bites—an irresistible treat that brings together the creamy richness of cheesecake with the warm, cinnamon-sugar goodness of churros. These bites are perfect for parties, a family gathering, or a cozy night in with something sweet.

Ingredients:

For the Cheesecake Filling:

  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract

For the Dough:

  • 1 package (8 oz) refrigerated crescent roll dough or puff pastry sheets

For the Churro Coating:

  • 1/2 cup granulated sugar
  • 1 tbsp ground cinnamon
  • Oil, for frying (vegetable or canola works well)
  • Instructions:

    1. Prepare the Cheesecake Filling:
      • In a medium mixing bowl, beat the softened cream cheese until smooth.
      • Add in the sugar, egg, and vanilla extract, mixing until well-combined. Set aside.
    2. Assemble the Bites:
      • Roll out the crescent roll dough and cut into small squares, about 2 inches by 2 inches each.
      • Place a spoonful of the cheesecake filling in the center of each dough square.
      • Fold the dough over the filling, pinching the edges to seal and form a small ball or pocket. Repeat with remaining dough and filling.
    3. Prepare the Churro Coating:
      • In a small bowl, mix the cinnamon and sugar together. Set aside.
    4. Fry the Bites:
      • Heat oil in a deep frying pan or pot over medium heat (about 350°F / 175°C).
      • Carefully add a few dough balls at a time, frying until golden brown on all sides, about 2-3 minutes.
      • Remove from oil and immediately roll each bite in the cinnamon-sugar mixture.
    5. Serve and Enjoy:
      • Let the bites cool slightly before serving. They’re best enjoyed warm and fresh, but you can also serve them at room temperature.
      • Tips:
        • If you prefer baking over frying, bake the bites at 375°F (190°C) for about 10-12 minutes, then roll in the cinnamon-sugar coating immediately after baking.
