Christmas-style steak posole with homemade tortillas sounds like a festive and comforting meal. Here’s a recipe that combines the traditional flavors of posole with the richness of steak, perfect for the holiday season. Christmas Style Steak Posole

Ingredients:

  • For the Posole:
    • 1 lb beef steak (such as sirloin or ribeye), cut into bite-sized pieces
    • 2 tablespoons olive oil
    • 1 large onion, finely chopped
    • 3 cloves garlic, minced
    • 1 teaspoon ground cumin
    • 1 teaspoon dried oregano
    • 1/2 teaspoon smoked paprika
    • 1/2 teaspoon ground coriander
    • 6 cups beef broth
    • 2 cups hominy, drained and rinsed
    • 2-3 dried chiles (such as ancho, guajillo, or pasilla), rehydrated, stems and seeds removed, and blended into a paste
    • 1 can (14 oz) diced tomatoes
    • Salt and pepper to taste
    • Juice of 1 lime
    • Fresh cilantro, chopped, for garnish
    • Radishes, sliced, for garnish
    • Shredded cabbage, for garnish
    • Avocado slices, for garnish
    • Lime wedges, for serving

Instructions:

  1. Prepare the Steak:
    • In a large pot or Dutch oven, heat the olive oil over medium-high heat.
    • Season the steak pieces with salt and pepper, then sear them in the pot until browned on all sides. Remove the steak and set aside.
  2. Cook the Aromatics:
    • In the same pot, add the chopped onion and cook until softened and translucent, about 5 minutes.
    • Add the minced garlic, cumin, oregano, smoked paprika, and ground coriander. Cook for another minute until fragrant.
  3. Build the Broth:
    • Return the seared steak to the pot. Add the beef broth, hominy, blended chile paste, and diced tomatoes.
    • Stir well, bring the mixture to a boil, then reduce the heat to a simmer. Let it cook for 1-2 hours, or until the steak is tender and the flavors have melded together.
  4. Finish the Posole:
    • Stir in the lime juice and adjust the seasoning with salt and pepper to taste.
    • Let the posole simmer for an additional 10 minutes before serving.
  5. Serve:
    • Ladle the posole into bowls and garnish with fresh cilantro, sliced radishes, shredded cabbage, and avocado slices.
    • Serve with lime wedges on the side.

Homemade Tortillas

Ingredients:

  • 2 cups masa harina (corn flour)
  • 1 1/2 cups warm water
  • 1/2 teaspoon salt

Instructions:

  1. Mix the Dough:
    • In a large bowl, combine the masa harina and salt. Gradually add the warm water, mixing until a dough forms. The dough should be moist but not sticky.
  2. Form the Tortillas:
    • Divide the dough into 12 equal portions and roll each portion into a ball.
    • Using a tortilla press or rolling pin, flatten each ball between two sheets of parchment paper or plastic wrap until it’s about 6 inches in diameter.
  3. Cook the Tortillas:
    • Heat a dry skillet or griddle over medium-high heat. Cook each tortilla for about 1-2 minutes on each side, until lightly browned and cooked through.
    • Keep the cooked tortillas warm in a towel as you finish the batch.

Serving Suggestion:

Place a warm tortilla on your plate, spoon some of the rich and hearty steak posole over it, and enjoy! The combination of tender steak, hominy, and a rich, flavorful broth, all wrapped in a fresh tortilla, makes for a truly festive meal.
