Ingredients:

For the crust:

  • 1½ cups chocolate cookie crumbs (e.g., gluten-free chocolate biscuits or Oreos, crushed)

  • ¼ cup melted butter

For the chocolate cheesecake filling:

  • 2 (8 oz) blocks cream cheese, softened

  • ½ cup granulated sugar

  • 1 tsp vanilla extract

  • 2 large eggs

  • ½ cup sour cream or Greek yogurt

  • 200g (7 oz) semisweet chocolate, melted and slightly cooled

For the strawberry topping:

  • 1½ cups fresh strawberries, hulled and halved

  • 2 tbsp sugar (optional, for extra syrup)

  • 2 tbsp strawberry jam (optional, for glaze)

1. Make the crust:

  • Preheat oven to 160°C (325°F).

  • Combine cookie crumbs and melted butter until well coated.

  • Press mixture firmly into the bottom of a springform pan (8 or 9-inch).

  • Bake for 8–10 minutes. Let cool.

2. Prepare the chocolate filling:

  • Beat cream cheese and sugar until smooth and creamy.

  • Add eggs one at a time, mixing gently.

  • Add vanilla, sour cream, and melted chocolate. Mix until smooth.

  • Pour over cooled crust and tap to remove air bubbles.

3. Bake:

  • Bake in a water bath at 160°C (325°F) for 50–60 minutes, until the center is just set.

  • Turn off the oven, crack the door, and let cool inside for 30 minutes.

  • Refrigerate at least 4 hours or overnight.

4. Strawberry topping:

  • Mix strawberries with sugar and let sit 10–15 mins to macerate.

  • Optionally heat strawberry jam until loose and brush over strawberries for shine.

  • Spoon over the chilled cheesecake before serving.

Tips:

  • For a gluten-free version, use GF chocolate cookies in the crust.

  • Add a drizzle of melted chocolate on top for drama.

  • Serve with whipped cream or extra strawberries on the side!
