Ingredients:
For the crust:

1½ cups chocolate cookie crumbs (e.g., gluten-free chocolate biscuits or Oreos, crushed)

¼ cup melted butter
For the chocolate cheesecake filling:

2 (8 oz) blocks cream cheese, softened

½ cup granulated sugar

1 tsp vanilla extract
-
2 large eggs
-
½ cup sour cream or Greek yogurt

200g (7 oz) semisweet chocolate, melted and slightly cooled
For the strawberry topping:

1½ cups fresh strawberries, hulled and halved

2 tbsp sugar (optional, for extra syrup)

2 tbsp strawberry jam (optional, for glaze)

1. Make the crust:

Preheat oven to 160°C (325°F).

Combine cookie crumbs and melted butter until well coated.

Press mixture firmly into the bottom of a springform pan (8 or 9-inch).

Bake for 8–10 minutes. Let cool.
2. Prepare the chocolate filling:

Beat cream cheese and sugar until smooth and creamy.

Add eggs one at a time, mixing gently.

Add vanilla, sour cream, and melted chocolate. Mix until smooth.

Pour over cooled crust and tap to remove air bubbles.
3. Bake:

Bake in a water bath at 160°C (325°F) for 50–60 minutes, until the center is just set.

Turn off the oven, crack the door, and let cool inside for 30 minutes.

4. Strawberry topping:
