🍫 Chocolate Rice Krispie Balls
Ingredients:
-
3 cups Rice Krispies cereal
-
1 cup creamy peanut butter (or sunflower seed butter for nut-free)
-
1/2 cup honey or corn syrup
-
1/2 teaspoon vanilla extract
-
1 1/2 cups semi-sweet or milk chocolate chips
-
Optional: sprinkles, shredded coconut, or crushed nuts for coating
Instructions:
-
Prepare the base:
In a large mixing bowl, pour in the Rice Krispies cereal. -
Heat & mix:
In a small saucepan over low heat, stir together the peanut butter and honey until smooth and warmed. Remove from heat and stir in the vanilla. -
Combine:
Pour the peanut butter mixture over the cereal. Stir gently until fully coated. -
Form balls:
Let the mixture cool slightly, then use your hands to roll it into 1-inch balls. Place them on a parchment-lined tray. -
Chill:
Place the tray in the fridge for about 20–30 minutes to firm up. -
Dip in chocolate:
Melt the chocolate chips in the microwave (in 30-second intervals, stirring in between). Dip each chilled ball halfway (or fully!) into the melted chocolate. Let excess drip off. -
Set & serve:
Return dipped balls to the tray. Decorate with sprinkles, coconut, or nuts if using. Chill again until chocolate sets.
Tips:
