Ingredients

  • 2 eggs, separated

  • ¼ cup sugar

  • 1 cup heavy whipping cream

  • 1 ½ cups fresh raspberries (or thawed frozen)

  • 2 tbsp sugar

  • 1 tbsp lemon juice

  • 1 tsp unflavored gelatin

  • 2 tbsp cold water

Instructions

  1. Prepare the crust:

    • Mix cookie crumbs and melted butter.

    • Press into a 9-inch pie dish.

    • Chill in the fridge for 15–20 minutes (or bake at 350°F/175°C for 8 minutes and cool).

    • Melt chocolate chips with butter in a heatproof bowl over simmering water. Stir until smooth.
