Chinese Chicken Cabbage Stir-Fry Recipe

Ingredients

  • 1 lb (450g) chicken breast (sliced thinly)
  • 2 cups cabbage (chopped; napa cabbage works well, but green cabbage is also great)
  • 1 small carrot (sliced into thin strips)
  • 1 small bell pepper (sliced)
  • 3-4 green onions (chopped)
  • 2 cloves garlic (minced)
  • 1 tbsp fresh ginger (minced)
  • 1 tbsp oil (vegetable or sesame)

Sauce Ingredients

  • 3 tbsp soy sauce
  • 1 tbsp oyster sauce (for added depth)
  • 1 tbsp rice vinegar (or white vinegar)
  • 1 tbsp hoisin sauce (optional, for extra sweetness)
  • 1 tsp sugar (or honey)
  • ½ tsp sesame oil
  • 1 tsp cornstarch (mixed with 2 tbsp water to thicken)

Instructions

  1. Prep the Chicken and Vegetables: Thinly slice the chicken breast. Chop the cabbage, slice the carrots and bell pepper, and prepare the green onions, garlic, and ginger.
  2. Make the Sauce: In a bowl, whisk together soy sauce, oyster sauce, rice vinegar, hoisin sauce (if using), sugar, and sesame oil. Set aside.
  3. Cook the Chicken: Heat oil in a large skillet or wok over medium-high heat. Add the chicken slices and stir-fry for 4-5 minutes until just cooked through. Remove from the skillet and set aside.
  4. Stir-Fry the Vegetables: In the same skillet, add a bit more oil if needed. Add garlic, ginger, and green onions, cooking for 30 seconds until fragrant. Add cabbage, carrots, and bell pepper, and stir-fry for 3-4 minutes until the veggies start to soften but remain crisp.
  5. Combine Everything: Return the chicken to the skillet, pour in the sauce, and stir everything together. Add the cornstarch mixture and cook for an additional 2 minutes, or until the sauce thickens and coats everything nicely.
  6. Serve: Garnish with a few extra green onions or sesame seeds if desired. Serve hot with steamed rice or noodles.

Tips

  • Substitutions: Swap chicken for tofu, shrimp, or thinly sliced beef for variety.
  • Add Spice: For a little kick, add some chili flakes or drizzle of sriracha to the sauce!
