Chili con carne

Chili con carne is the ultimate comfort food, rich in flavor and packed with wholesome ingredients. A classic Tex-Mex dish, this hearty stew combines tender ground beef, warming spices, and a mix of beans and tomatoes, creating a robust and satisfying meal.

Ingredients:

  • 1 lb ground beef
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (6 oz) tomato paste
  • 2 cups beef broth
  • 2 tbsp chili powder
  • 1 tbsp cumin
  • 1 tsp paprika
  • 1 tsp oregano
  • Salt and pepper to taste
  • 1 tsp cayenne pepper (optional for heat)
  • 1 tbsp olive oil

Instructions:

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and garlic, sautéing until soft and fragrant (about 5 minutes).
  2. Add ground beef, breaking it up with a spoon, and cook until browned. Drain excess fat if necessary.
  3. Stir in the chopped bell peppers and cook for another 5 minutes until they soften.
  4. Add the chili powder, cumin, paprika, oregano, cayenne pepper, salt, and pepper, stirring well to coat the beef and vegetables with the spices.
  5. Stir in the tomato paste and diced tomatoes, followed by the beef broth. Bring to a boil, then reduce the heat to low and let the chili simmer uncovered for 30 minutes.
  6. Add the kidney beans and black beans to the pot, stirring well. Continue to simmer for an additional 10–15 minutes, allowing the flavors to meld together.
  7. Taste and adjust seasonings if necessary. Serve hot, garnished with sour cream, shredded cheese, or fresh cilantro if desired.
