Chicken Vegetable Soup

There’s nothing quite like a bowl of chicken vegetable soup to warm you up on a chilly day or when you’re feeling under the weather. Packed with tender chicken, fresh vegetables, and flavorful broth, this soup is both hearty and nutritious.

Ingredients

For the soup:

  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 medium carrots, sliced
  • 2 celery stalks, chopped
  • 1 red bell pepper, diced (optional)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • ½ teaspoon salt (or to taste)
  • ½ teaspoon black pepper
  • 6 cups chicken broth
  • 2 cups cooked chicken, shredded (rotisserie chicken works great)
  • 1 cup green beans, chopped
  • 1 cup corn (fresh, frozen, or canned)
  • 1 cup diced tomatoes (canned or fresh)
  • 1 cup baby spinach or kale (optional)
  • 1 tablespoon fresh parsley, chopped (for garnish)
  • Juice of ½ a lemon (for a fresh touch)
  • Instructions

    1. Sauté the Aromatics:
      • In a large pot, heat olive oil over medium heat.
      • Add diced onion and cook for 2-3 minutes until softened.
      • Stir in garlic, carrots, celery, and bell pepper. Cook for another 3-4 minutes.
    2. Add Seasonings & Broth:
      • Sprinkle in thyme, oregano, salt, and pepper. Stir well.
      • Pour in the chicken broth and bring to a boil.
    3. Add Chicken & Vegetables:
      • Reduce heat to a simmer and add shredded chicken, green beans, corn, and tomatoes.
      • Let the soup simmer for 15-20 minutes, allowing the flavors to meld.
    4. Final Touches:
      • Stir in spinach or kale (if using) and let it wilt for a couple of minutes.
      • Squeeze in fresh lemon juice for brightness.
    5. Serve & Enjoy:
      • Ladle the soup into bowls, garnish with fresh parsley, and serve warm.
      • Pair it with crusty bread for a complete meal!
      • Tips & Variations

        • Make it heartier: Add cooked rice, quinoa, or small pasta like orzo.
        • Spice it up: Add a pinch of red pepper flakes for heat.
        • Slow cooker option: Combine all ingredients (except spinach and lemon juice) in a slow cooker and cook on LOW for 6-8 hours or HIGH for 3-4 hours. Stir in spinach and lemon juice before serving.
