Chicken quesadillas

Chicken quesadillas are the perfect blend of melty cheese, savory chicken, and crispy tortillas, making them a go-to meal for a busy weeknight or a casual gathering. The combination of spices like cumin and chili powder adds a warm, smoky flavor that complements the juicy chicken and sharp cheese.

Ingredients:

  • 2 cups cooked chicken (shredded)
  • 1 cup shredded cheese (cheddar, Monterey Jack, or a blend)
  • 4 large flour tortillas
  • 1/2 cup diced onions
  • 1/2 cup diced bell peppers (optional)
  • 1/2 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 2 tablespoons olive oil or butter
  • Sour cream, salsa, guacamole (for serving)

Instructions:

  1. Heat a skillet over medium heat and add 1 tablespoon of olive oil or butter. Sauté onions and bell peppers until soft.
  2. Add shredded chicken, cumin, and chili powder. Stir well to combine and cook for 3-5 minutes until heated through. Set aside.
  3. In another pan, heat 1/2 tablespoon of oil over medium heat. Place a tortilla in the pan, and sprinkle half with shredded cheese.
  4. Add the chicken mixture on top of the cheese, then sprinkle more cheese over the chicken.
  5. Fold the tortilla in half, pressing gently. Cook for 2-3 minutes on each side until golden brown and the cheese is melted.
  6. Repeat with the remaining tortillas and filling.
  7. Slice into wedges and serve with sour cream, salsa, and guacamole.
